On the 22nd floor of the Dusit Thani Hotel, you are greeted as the elevator opens to beaded curtains and a bar with 5.5 meter fish tanks. In collaboration with Michelin star chefs, Jacques and Laurent Pourcel from Montpellier, France, D'sens features innovative French a la carte and set menus of your choice in a trendy, casual, yet elegant atmosphere with a panoramic view of Bangkok.

The menu is not extensive, however, it doesn't need to be with such inviting selections. There are separate menus for lunch and dinner changing every three months.

Soft rock lobster parfait with fresh bits of lobster teases your taste buds as a delicious starter. As an appetizer, my companion chose Escalopes de foie gras (1,250 baht) cubes of duck liver that had been pan-fried in a light crust of gingerbread served on an apple and passion fruit compote having a sweet balance and pleasantly light. My own choice, Le presse de homard (1,700 baht) was decorated with the carapace of an elegant European lobster. It was a chunky blend of lobster pressed with smoked duck, mango, snow peas and vanilla-flavored olive oil. That little touch of vanilla gave a gentle lift to the creamy layers of flavor. There are some great meat dishes, such as, the roasted rack of lamb that is so tender you don't need to chew. There is also well prepared roasted pigeon, this French import was delicious, tender and meaty. It was accompanied by a Moroccan-style pastila of curry and almonds and jus perfumed with cocoa. The Le filet de turbot roti (1,800 baht) is a snowy white expanse of tender flesh large enough to cut into satisfyingly big pieces. It is served in a veal sauce with a citrus flavored jus so that savory flavors were blended with fresh, acidic sharpness.

The grand finale is dessert and guests should definitely leave room for this decadent experience. Chocolate lovers will enjoy the chocolate coulant with a caramel center or you can opt for the thin-crusted strawberry tart (290 baht) with saffron-flavoured strawberry juice, lemongrass and lemon sherbet.
