Every one of us who have been cooking, have been sometimes wondering are those eggs in the fridge still usable?

Unfortunately we sometimes realize the eggs are not good, but not until they are already in the baking mix. For the better recipes you may want to use freshest possible eggs, although they do not give away anything based on smell yet.

Our Chef Khun Win tells easy ways to make sure the freshness of eggs before you start cooking.

So, how does fresh egg look like?

When you have broken the egg to the glass, take a look at the yolk. Flat yolk is usually a sign of egg getting old. Albumin should be blurry. Colorless and bright albumin is a bad sign. Blurriness is due to carbon dioxide that slowly dissipates when the egg gets older.

What about the traditional test?

You may check the freshness of eggs without breaking the egg. Fill a bowl with cold water and place the eggs in the water. All those eggs that float, you can throw away. This is based on the fact that old eggs have more air in them.

Red spots in eggs?

Sometimes you may see a red spot in the egg you just broke into the glass. This might be fact that chicken has had stress while laying eggs. Egg itself is still good but do remove the red spot with spoon.

How to keep your eggs fresh?

Do not keep your eggs at the fridge door. Constant fridge door opening expose the eggs to warm. Rather keep the eggs in their own box at the end of the fridge. Strong cheeses and other foods with strong smell should be kept on the other side of the fridge, packed in glad wrap.
