Chicken Wrapped In Pandanus Leaf

 
     3 cups     bite-size chicken-breast
       2 tsp.    garlic
    1/2 tsp.    ground pepper
       2 tsp.    sugar
       1 Tb     light soy sauce
       1 Tb      sesame oil
     30-35      fragrant pandanus leaves or foil
 4-5 cups      cooking oil for frying
Place the sliced chicken in a bowl. Pound the garlic and pepper until finely ground, and sprinkle over the chicken. add the soy sauce, sesame oil, and sugar, and gently mix together and allow to marinate for at least an hour.

Wrap the chicken with the pandanus leaf or foil so as to form triangular packets and tie closed with banana fiber.

Deep-fry the packets in hot oil over medium heat. When done, remove from the oil and drain on absorbent paper to soak up as much oil as possible.

When served the chicken is removed from the pandanus wrapper and eaten with a dipping sauce, worcestershire sauce , or chilli sauce.
