         Fried Rice With Beef
 

Ingredients  

   14  1/2 oz beef fillet
   4 tsp dark soy sauce, & a few extra drops
   2 tsp freshly ground white pepper
   4 Tb oil
   1 1/2 inch old ginger, sliced
   1 cup thinly sliced shallots
   6 cups cooked rice
   2 tsp salt
   1 med spring onion (scallion), chopped
 
   Sliced Chilis in Soy  Sauce                    
   4 med red chilis, deseeded & sliced
   1/2 Tb light soy sauce 
Preparations
  1. Slice beef into thin strips across the grain. Season with 4 tsp d soy sauce & half the    
      pepper.   
  2. Heat the oil in a wok and saute the ginger and shallots until golden brown.  

  3. Add the beef and saute for about 1/2 to 1 min. depending on how well you like the meat.  
  4. Stir in the salt then add the rice, remaining pepper, and 2-3 drops dark soy sauce to color  
      rice.
  5. Cook over a low heat, stirring constantly, until the rice is warmed through.
  6. Garnish with spring onion and serve immediately.
  7. Combine the sliced chilis and light soy sauce in a small dish and serve as a condiment.
