Flower Dumpling filling In Minced Pork & Shrimp
(Sa-Khu Sai-Mu)
 

Ingredients  

   1 1/2 cup small tapioca pellets
   1 cup chopped pork
   1 cup chopped onion
   1/2 cup ground roasted peanuts
   4 garlic cloves
   1/2 tsp pounded coriander root
   3 Tb fried garlic (for topping)
   1/4 tsp ground pepper
   3 Tb sugar   
   3 Tb cooking oil
  3Tb fish sauce
  2/3 cups hot water  
  lettuce
  coriander & leaves
  chillie
Preparations

    1.   Clean tapioca pellets. Adding hot water a little at a time, knead until soft and then let  
          stand for an hour. Then form into 1/2 inch balls.
    2.   Fry coriander root until fragrant. Add pork and fry until done, adding sugar and fish  
          sauce to obtain sweet and salty taste. Add onions and continue frying until dry, then  
          add peanuts and pepper, mix in, and dip out of pan.
     3.   Flatten out tapioca ball into thin sheet, place 1 1/2 tsp filling on sheet and wrap up to 
          form a secure ball. Line steamer tray with banana leaf or foil, brush with cooking oil 
          and place balls on it, taking care not to crowd balls in tray. Steam 15 minutes and  
          sprinkle with fried garlic, serve.
   
4.   Serve with fresh vegetables and hot chillies.
