Szechuan, or Sichuan cuisine uses chilies that have been either marinated or fried in oil, as well as Sichuan wild pepper (huajiao). This crunchy little spice is described as 'ma ' in Mandarin - the root of anesthesia - because it effectively numbs your tongue and taste buds. Although the flavor of Sichuan wild pepper has been compared to that of soap dipped in tiger balm, the hot-cool-numb sensation produced by crunching on a pepper is addictive. Dishes in Szechuan are noted for their varied and heavy flavors. The eight common seasonings used are pepper sauce, pepper with vinegar, pepper with fish sauce, chili jam with wild peppercorn, cayenne pepper with wild peppercorn, black pepper with peanut and sesame paste, peppercorn with sesame oil and chili oil. Distinct dishes include pork and chicken cubes with peanuts and chili, and 'clubbed chicken', which is chicken meat pounded and shredded into floss before adding the eight seasonings.

There are many Sichuan restaurants in Beijing, but if you ask native Sichuanese, Yuxiang Renjia is a top choice. Huge earthen vats filled with pickled vegetables, hanging bunches of dried peppers and garlic, and simply dressed waitresses evoke the Sichuan countryside. The restaurant does an excellent job of preparing provincial classics such as gongbao jiding (diced chicken stir-fried with peanuts and dried peppers) and ganbian sijidou (green beans stir-fried with olive leaves and minced pork). Thirty different Sichuanese snacks are served for lunch on weekends at very reasonable prices. Credit cards accepted

Order a feast, pay like a pauper at the magnificent Yu Xin, where a long room filled with booths, private nooks and a gazebo-like table (complete with faux foliage) provides the backdrop for some of the city's most Sichuan cuisine. As is standard in China, dishes arrive in a constant stream, served as soon as they are prepared. We mixed small cold dishes, such as sesame and dried bean curd and mashed garlic and cucumber, with generous portions of eggplant in chili sauce, roll of yolk and duck meat, toffee sweet potatoes and mantou, fried buns served with condensed milk all for less than $5 while the bullfrog cooked with pao peppers at $7.20 is what keeps folks coming back.
