Zhejiang Cuisine, known as Zhe cai, is one of the Eight Culinary Traditions of China. Derived from the native cooking styles of the Zhejiang region in China, the cuisine consists of three styles, each originating from a city in the province: the Shaoxing style specializing in poultry and freshwater fish, the Ningbo style specializing in seafood, with emphasis on freshness and salty taste and Hangzhou a style characterized in rich variations and the utilization of bamboo shoots. Zhejiang Province is regarded as the homeland of fish and rice so seafood and fish are an important part of it. Zhejiang Cuisine has a history of over 2,000 years and is characterized by delicious, light, crisp and elegant flavor. It is not greasy and has a reputation for the ladies who are keeping on a diet.
