PAD THAI GOONG SOD
(Thai Fried Noodles)
 
 

Ingredients  

 ٭  300g. fresh flat rice-flour
 noodles
 ٭  10 prawns 
 ٭  500g. bean sprouts
 ٭  3 duck eggs
 ٭  1 cake hard soya bean curd
 ٭  1/2 cup ground roasted
 peanuts
 ٭  1 Tb chopped garlic
 ٭  1 Tb chopped shallots 
 ٭  4 Tb sugar
 ٭  1/2 cup oil
 ٭  3 Tb tamarind juice
 ٭  50g. chives
 ٭

 2-3 Tb each: fish sauce and
 lime juice

 ٭  1 Tb dried pound chillies

  

Preparations
1.   Soak the noodles in warm water to soften
2.  Heat 3 tablespoons oil in work and saute garlic and shallots. Add the noodles, fish sauce, lime juice and tamarind juice quickly fry to prevent sticking, set aside the noodles in a plate.
3.  Put another 3 tablespoons oil into a pan, fry prawns, bean curd, and chillies together.
4.  Put the remained oil into a pan, break the eggs into pan and scramble spreading egg thoroughly, and the noodles, beab sprouts, chives, mix well.
5.  Serve garnished with peanuts, bean sprouts, banana blossom and chives.
